One of the fruit’s we look forward to the most is Rhubarb! This Plucky Fruit busy doing its growing in the Winter Months usually appears in our local Market sometime in Feb ready to make an appearance on our Spring Flavours Menu. We create a somewhat Tart Rhubarb Compote and then Swirl that into a Vanilla Egg Custard Base - using local Eggs of course.
